Roasted Chicken, Sausage, and Peppers with Potatoes

Ingredients
- Proteins: Hot Italian sausage links, bone-in, skin-on chicken thighs
- Veggies: Sweet peppers, Yukon Gold potatoes, red and yellow onions
- Seasonings: Olive oil, dried Italian herbs, kosher salt, black pepper, fresh parsley
Instructions
- Preheat & Prep Sausage: Preheat the oven to 450°F (230°C). Brown sausage in a skillet with 1 tbsp olive oil, piercing the links to release juices. Let cool, slice into 2-inch pieces, and return to the skillet with juices.
- Prepare Chicken & Veggies: Slash chicken thighs to the bone, halve or quarter peppers, and combine with onions, sausage, potatoes, Italian herbs, salt, pepper, and remaining olive oil in a mixing bowl. Toss until well-coated.
- Roast: Spread the mixture evenly in a large roasting pan, placing chicken thighs skin-side up and positioning potatoes near the top. Roast for about 1 hour, or until the chicken reaches an internal temperature of 165°F (74°C) and everything is caramelized.
- Garnish & Serve: Sprinkle with chopped fresh parsley and serve hot.
