Create this Creamy Chicken Pasta Bake for a comforting, cheesy dinner! Tender chicken, penne pasta, and a rich mascarpone tomato sauce are baked to perfection under a golden, bubbly layer of cheddar and mozzarella. It’s a hearty dish perfect for weeknights or family gatherings.

Ingredients

  • For the Sauce: Olive oil, onion, garlic, chili flakes, canned chopped tomatoes, caster sugar, and mascarpone
  • For the Bake: Chicken breasts, penne pasta, mature cheddar, mozzarella, and fresh parsley

Instructions

  1. Make the Sauce: Sauté onion in olive oil until soft, then add garlic and chili flakes. Stir in chopped tomatoes, sugar, and seasoning. Simmer uncovered for 20 minutes, then mix in mascarpone.
  2. Cook the Chicken: Season and fry chicken strips in olive oil until cooked through (5–7 minutes).
  3. Assemble the Bake: Preheat oven to 220°C/200°C fan/gas 7. Cook penne pasta according to package instructions, toss with olive oil, and transfer to an ovenproof dish. Mix in the chicken and pour the sauce over. Top with cheddar, mozzarella, and parsley.
  4. Bake: Bake for 20 minutes until golden and bubbling.
